Whipped Shortbread Cookie
1 Cup of softened butter
1½ Cups of all-purpose flour
½-Cup confectioners’ sugar
Pre-heat oven to 350 degrees.
Place softened butter in a bowl and whip with a hand mixer for one minute.
Add flour ½ cup at a time, whipping after each addition until well incorporated.
Add confectioners’ sugar and whip again for about 5 minutes.
Place a teaspoon full for each cookie on a cookie sheet.
Bake in oven for 11-12 minutes or until bottoms are lightly browned.
